History

This coffee comes from the Kizi Rift region in Rwanda, highlighting the Bourbon Red variety using the innovative Honey anaerobic “Sleeping bag” process. Small producers ferment the cherries without oxygen and then dry them using an opaque material that retains moisture. This process alternates between open and closed stages, facilitating uniform drying and increasing fermentation.

Vibrant notes of red cherry and the rich depth of dark chocolate are complemented by the citrusy touch of orange and the warmth of walnut. Sweet and tart cranberry raisins complete this sensory experience, highlighting the dedication and skill of Kizi Rift farmers.
